Reasonable Recipes

Leslie Cecere, of Port St. Lucie, Florida, presents you with her amazing culinary art in the realm of vegan food preparation. She shared one of her exquisite and delicious recipes (we’re not kidding or exaggerating) each week for over a year, starting in Jan. 2011. She also provides advice and tips on healthful living.

Live Gardenburgers
“Man lives on one-fourth of what he eats. On the other three-fourths lives his doctor.” Inscription on an Egyptian pyramid, 3800 B.C. This tasty recipe may be formed into balls or cutlets or fillets, or stuffed into your favorite veggies, (peppers, cucumbers or mushrooms) or served on top of a salad… Be creative and enjoy!
-
Green Bean Salad
“Vitamins, minerals, amino acids (protein), enzymes, carbohydrates, fats, water and fiber are all essential components of a healthy diet, and every one of these essential components can be found in RAW fruits and vegetables.” (Recipes for Life, pg.68)

Maple Baked Oatmael
A wonderfully simple way to prepare oatmeal. No fussing over the stove. Just pop it in the oven and then serve it up with your favorite yummy toppings!
-
Cream of Cauliflower Soup
A few simple ingredients. One fabulous soup! Any vegetable broth will work for this recipe, but my favorite vegetable broth mix is “Seitenbacher Vegetarian Vegetable Broth and Seasoning” available at your local health food store. It makes everything taste so special!
-
Raw Ravioli
When you serve up these amazing ravioli, no one will believe that the wrapper is made of turnip!
-
Cashew Almond Spread
This spread makes a great sandwich filling but my favorite way to enjoy it is stuffed into bell pepper halves or cucumber boats. You can serve it as a dip with your favorite veggies, too. Be careful not to use too much water when making the almond paste. You can always add a little more water afterwards, if the texture turns out too dry.
-
Cornbread Muffins
These muffins are slightly sweet and so light. I added fresh corn kernels from one ear of corn and some chopped onions. Adding some fresh chopped herbs would be wonderful, too. Makes me want to cook up a big batch of chili!
-
Spicy Home Style Fries
Potatoes are a favorite comfort food. Unfortunately, they’re often eaten deep fried or loaded down with unhealthy fats like butter, cheese and sour cream. Try these tasty baked fries and enjoy all of the exceptionally healthful benefits of potatoes without the artery clogging fats.
-
Date Pecan Squares
Wonderfully delicious, these bars will definitely satisfy your sweet tooth. I like to use moist and tender Medjool dates for this recipe, but other dates will work as well. This mixture can also be used as a pie crust, if desired.
-
Vegetable Lasagna
During a camping trip with friends last year, I enjoyed some of the best tasting lasagna. The chef had no recipe (of course) but she did her best to write down what she had “thrown together”. This is my adapted version. If you have your own favorite homemade tomato sauce, use an equal amount of that in place of the jar sauce, canned tomatoes, tomato paste and seasonings. It’s hard to believe it’s vegan!
-
Garlicky Roasted Broccoli
Not a broccoli lover? This recipe just might change your mind. And it’s easy! The garlic, ginger and lemon give it so much flavor, and roasting changes the texture just a bit. It’s absolutely delicious! I easily eat a whole crown in one serving.
-
Nutty Salad
This is a beautifully colorful and crunchy salad. It takes a little time to chop all the veggies but the result is well worth the effort. Double the recipe if you plan to bring this to a potluck lunch or picnic. There never seems to be enough! Yum!
